Ingrediants:
Flour- 1 cup
Sugar-2 cup
Ghee- ½ cup
Cashews-3 tblspn chopped
Cardamom / Yelakai-3 crushed
Yellow Food Colouring-a pinch
Method:
Heat ghee in a kadai..Add in cashews and fry till golden..Remove this and set aside.
Now add in flour and fry till light golden colour and you get a lovely aroma..Remove this to a plate and set aside..
Now take sugar in the same kadai and add in some water to cover the sugar..
Bring
this to boil and let it reach one string consistency ( ie,if you take
the spoon from the sugar syrup the last drop falling from the spoon
forms a string shape or if you take some water in a bowl and drop this
sugar syrup in that water,the sugar wont dissolve in that..)
Now add in cardamom and food colouring to this and mix well.
Add in the fried flour to this and mix well..Cook this for 5-10 mins stirring continuously..Add in cashew pieces and mix well..
At one stage the barfi will leave the sides and starts to come together..
At
that time pour the maida mixture to a well buttered tin and flatten it
out...Spread some sliced almond pieces over this for garnishing, but
make sure you press the almonds over this slightly so that it sticks to
the barfi.
Allow it to cool..It will get harden as it cools down..
Cut into pieces and serve or give it as presents..
Note:
After it cools a bit, touch and see..If it is still gooey, don’t
panic..Just empty the whole lot in the kadai again and stir few more
minutes...Now put it back to the tin and proceed as usual..
