Chinneese Fried Rice

Ingredients:

Rice – 3 cups cooked (any rice as you wish)
Onion – 1 sliced thinly
Carrot – 2 large cut into matchsticks
Beans – 10 cut in diagnols
Ginger – 1 tblspn minced
Garlic – 1 tblspn minced
Green Chilli – 3 cut in lengthwise
Soya Sauce – 2 tblspn or to taste
Ajinomoto – 1 tsp (optional)
Sugar – 1 tblspn
Salt to taste
Coarsely Crushed Pepper to taste
Oil- 2 tblspn
Spring Onion for Garnishing

Method:

Heat oil in a wok till it smokes..Add ginger, garlic and green chilli and mix well.

Add in onions and fry for 2 mins. Add in all the vegetables and toss well.

Add sugar and ajinomoto(if using) and mix well. Cook on high heat for 10 mins .

Add rice and toss well. Add in salt, pepper, soya sauce and mix well.

Fry on high heat for 3 mins.

Garnish with spring onion and serve hot..

Chineese Idly

Ingredients:

5 Idlies
1/2 capsicum
1/2 carrot
1 onion
1 tomato
1/4 cabbage
3 beans
Black pepper powder
Tomato sauce
Soya sauce
Garam masala powder
Corriander powder
Salt
Few tsps oil

Method:

Cut the veggies in long thin slices.
Heat a flat bottomed kadai and add few tsps of oil. 
Add onion first and saute for few mins in low flame. 
Increase the flame and keep in high flame and add capsicum and saute continuously for few mins. 
Add carrot, cabbage and beans and saute continuously for few mins. 
Now add tomato sauce, soya sauce, few tsps. of garam masala, corriander powder and salt. 
Mix well and saute for few mins.
Transfer this mixture to a plate. 
Cut the idlies into pieces and add to kadai and add few tsps of oil and saute for few mins. 
Now add the mixture to idlies and saute for few mins.

Chilly Idli

Ingredients:

Onion-2 sliced
Tomato-3 Sliced
Garlic-6 cloves sliced
Curry leaves-1 handful
Tomato puree-1 cup
Idli-10 cubed
Red chilli powder-1 tblpsn
Turmeric powder-1 tsp
Garam masala powder-1 tsp
Saunf(sombu)-1 tsp
Cinnamon(pattai)-1 inch piece
Red colour-a pinch
Salt to taste
Oil-2 tblspn
Coriander leaves for garnishing

For Batter:

Maida-1 cup
Corn flour-1 tblspn
Salt to taste
Pepper-1 tsp

Method:


First mix the ingrediants given for the batter with some water into a smooth paste.Dip each idli cubes in this and deep fry till golden.

In a kadai add oil,saunf,cinnamon and crackle it,Add in garlic,curry leaves and fry for 1 min.

Add in onions and fry till golden brown.Add in tomatoes and mix well.Add in tomato puree and cook till oil separates.

Put in all the spices and mix well.now add in red colour and mix until combined.

Throw in all the fried idli pieces and mix well till everything is combined.

Garnish with coriander leaves and serve hot.
